It’s nice when a plan comes together.

We make lots of different recipes of sausages, but our best sellers are our Traditional and Cumberland Pork Sausages.

So, we were delighted with the judge’s comments about our Cumberland Pork Sausages at the recent Taste of the West Awards

The Gold award is a great recognition of our team and of how we can produce an artisan type product in volume.

How do we do it?

I asked the internet for some help; how do we do it?

The response was.

Westaway Sausages, a UK-based company, is known for its commitment to quality and consistency in their sausage production.

While specific details about their use of Failure Modes and Effect Analysis (FMEA) are not publicly available, we can infer from their practices how they might be applying similar principles to ensure the quality of their products.

Eliminating Variables in Ingredients and Process:

Westaway Sausages focuses on eliminating variables in their sausage-making process to ensure consistency. They use fresh pork with deliveries every two days, which helps maintain the freshness of their products. They also control the temperature during the sausage-making process to maintain freshness. For example, they use flake ice rather than chilled water, cut mixing times, and even chose rusk that had a low heat of hydration.

Quality Control and Process Review:

Westaway Sausages conducted a complete process review when they started producing frozen sausages. They examined the interstitial ice within the sausage using an electron microscope at a local university and found that by careful process control, they could ensure the water molecules froze in flakes rather than in blocks. This process control helps maintain the quality of their sausages when cooked from frozen.

Sustainable Manufacturing:

Westaway Sausages also focuses on sustainable manufacturing. They use concepts like smart manufacturing, where tags, software, and machinery are digitally connected, and information on stock and process are tracked in real time. This allows them to quickly adapt to changes in demand and maintain flexibility in their manufacturing process.

In summary, while the specific use of FMEA is not mentioned, Westaway Sausages appears to use similar principles to control their manufacturing process and ensure the quality of their products. They focus on eliminating variables, maintaining freshness, conducting thorough process reviews, and using sustainable manufacturing practices. These efforts likely contribute to their ability to produce award-winning sausages. However, for more specific details about their use of FMEA and other quality control processes, it would be best to contact Westaway Sausages directly.

That is reassuring.

Some 30 years ago I did my City and Guilds in Quality Assurance. The stages in continuously improving a product or service are still relevant today. And the job is never done!

  1. Plan what you want.
  2. Document how you are going to do it.
  3. Do it.
  4. Review to improve.
  5. Document the changes.

And another thing our Traditional Pork Sausages also won a Gold award, the harder you work the luckier you get.
