In a frying pan, gently fry the sausages for 15 minutes on a medium to low heat, turning every couple of minutes. After 15 minutes add the onion & cherry tomatoes to the pan, and leave to cook for a further 5 minutes or until done.
Meanwhile, lay the ciabatta roll halves, cut-side up, on a baking tray and spread each with pesto. Top each half mozzarella slice, then grill for 2 mins or until golden and bubbling.
Add the sausages and a handful of rocket, and put the roll back together, pressing down firmly to hold the fillings in place.Back to Recipes
